Extra Thoughts: This recipe is so quick and easy. You can use white or brown rice or even add some quinoa. Also you can use any kind of cheese, this would be good with pepper jack as well.

 

Ingredients:
3 bell peppers, halved and seeds removed
1 lb. ground beef or ground turkey
8 oz. of your favorite salsa, fresh or from a jar
1 cup cooked rice
8 oz. cheddar cheese, shredded
salt and pepper to taste
Toppings: sour cream, avocado, cilantro

 

1. Preheat oven to 350. Place the halved peppers in a small baking dish.

2. Prepare your favorite rice according to package directions. You can also use precooked rice.

3. In a large skillet brown the ground beef or turkey, drain the fat, and season to taste with salt and pepper.

4. Add the salsa and cooked rice to the browned meat. Stir to combine.

5. Fill each halved bell pepper with the meat mixture. Fill until almost overflowing. Add the Shredded cheddar cheese to the top of each stuffed pepper. 

6. Bake at 350 for approx. 30 minutes until cheese is melted and peppers are tender.

7. Top with sour cream, avocado, and cilantro
