Extra Thoughts: This salad is a delicious mix of sweet and savory. You can substitute nuts for the sunflower seeds and could add chicken instead of bacon. Really the possibilities are endless! I was pleasantly surprised to see how well in turned out using honey instead of sugar!

Meal Prep: If you do not have enough broccoli on-hand add some shredded cabbage to equal the total of 8 cups.

 

Ingredients:

8 cups Broccoli, cut into small bite size pieces
1/2 cup onion, diced
1/2 cup raisins
1/3 cup salted sunflower seeds
1/2 pound bacon, cooked and cut into small pieces
1 cup mayonnaise
2 Tablespoons Honey (or) 1/4 cup white sugar
1-2 Tablespoons white vinegar

 

1. Cook bacon in a skillet. In the meantime cut up broccoli and onion and place in a bowl along with sunflower seeds and raisins.

 

2. When bacon is finished cooking, cut into small pieces and add to broccoli and onion mixture.

 

3. Mix mayonnaise, sugar/honey, and vinegar in a small bowl and pour over broccoli mixture and stir to combine all ingredients. Refrigerate and serve cold.
