By Chef Gretchen Fayerweather

Ingredients:
2 sheets Puff Pastry, thawed
8 ounces, Havarti Cheese (you can also substitute Gouda or Colby cheese)
1 bunch Asparagus, washed
Optional: salt, pepper, and balsamic glaze

1.  Thaw out store bought puff pastry. Gretchen’s favorite and the easiest to find is Pepperidge Farms in freezer isle.

2.  Preheat oven to 400F, while waiting, peel woody ends of asparagus and grate your choice of cheese.

3.  Place the sheets of puff pastry on a baking sheet with parchment paper and sprinkle the cheese over the sheets, completely cover them! Line up the asparagus on top of the cheese.

4.  Bake for 25-35 minutes, or until golden brown. When you remove the pan, the pastry will be super fluffy and tall, however, it may deflate.

5.  Slice it into squares and serve.

6.  If you like balsamic glaze, this will add a tart and sweet favor to your delicious Asparagus Tarte! Drizzle with balsamic glaze and season with Salt and pepper, optional. Great warm or cold!
