This salsa gets better with time and will be more amazing tomorrow!

Ingredients:
2 large tomatoes
1/2 jalapeno
1 sweet onion top, green only
1/2 cup fresh cilantro leaves, chopped
1/2 teaspoon garlic, minced
1 fresh lime, zested and juiced
1 teaspoon honey
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1 pinch kosher or sea salt and black pepper
Garnish with cilantro

1.  Gather ingredients, wash all produce. 

2.  Tomatoes: cut in half, core, quarter each half. Deseed by pushing the seeds out into a bowl with your thumb. Dice into small pieces.

3.  Jalapeno: Cut stem off, then half pepper. Use a spoon to scrape seeds out, dice small. Use only 1/2 the pepper! Wash hands thoroughly of all pepper residue.

4.  Very thinly slice the top of the onion, only using the greens for this recipe.

5.  Zest the lime and then squeeze out all the juice. Combine all ingredients, including spices, honey, salt, pepper, and garlic.

6.  Serve garnished with cilantro and a side of your favorite chips!
