Food Prep: You can grab all of these fresh items for your csa Farm Box to try Chef Rob’s recipe. All you need to have on hand is salt, pepper, and vinegar.

Ingredients:
1 lb ground beef (hamburger)
Salt & pepper to taste
2 garlic scapes, finely chopped
2 scallions, thinly sliced
1 cup strawberries, sliced
1 bunch asparagus, trimmed & chopped
1–2 heads bok choy, chopped
A few handfuls of lettuce (any mix you have)
Handful of fresh cilantro, chopped
Olive oil

Optional: splash of rice vinegar or balsamic, sesame seeds for garnish

 

1.  Heat a pan over medium heat. Add ground beef, season with salt and pepper. When mostly browned, stir in chopped garlic scapes and cook until beef is fully cooked and scapes are tender, about 2–3 more minutes. Set aside.

2.  In a second pan, heat 1 tbsp olive oil. Add asparagus and bok choy, a pinch of salt, and sauté 4–5 minutes until crisp-tender. Add scallions in the last minute. Remove from heat.

3. Use chopped lettuce as the base. Top with cooked beef mixture, sautéed veggies, sliced strawberries, and a sprinkle of chopped cilantro. Drizzle with olive oil and a splash of vinegar if desired. Garnish with sesame seeds for extra texture.
