Extra Thoughts: If you don’t want to use milk you can substitute grain milk, nut milk, rice milk or water. This recipe is very versatile. Play around with the ingredients and add the spices and herbs that you love.
Meal Prep: This is an easy set-it-and-forget it recipe for crock pot that have the auto feature.
Ingredients:
6 medium ears sweet corn, cut in half
2 cups Milk (can substitute gain milk, nut milk or water)
1 medium onion, chopped
6 Tablespoons butter, cubed
6 fresh thyme sprigs
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup fresh cilantro leaves, chopped
2 green onions, sliced
1. Combine first 8 ingredients in your slow-cooker. Cook, covered, on high 2-3 hours or until the kernels are tender but crisp when poked with the tip of a knife. Serve with cilantro and green onions.
