Food Prep: For quicker cooking time, poke several holes in sweet potatoes on all sides and place one at a time in the microwave for 5 minutes per side, until fork tender.

Ingredients:
2 sweet potatoes
1 pound of ground beef (or ground chicken or turkey)
1 Tbsp chili powder
1 tsp ground cumin
1 tsp salt
1/2 tsp black pepper
1/2 tsp cayenne pepper (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup water
1 can of diced green chiles

2 cups of spinach 
Toppings:
Sour cream
Shredded Cheese
Jalapenos
Cilantro

1.  Poke several holes in sweet potatoes on all sides and bake in the oven at 400 degrees for approximately 1 hour (until fork tender)

2. Tear the spinach into small pieces, rinse and set aside.

3.  Brown ground beef in skillet, drain, add seasonings, green chiles, and water. Let simmer for a couple minutes. Last add the spinach to meat mixture and let wilt for a couple minutes then remove from heat.

4.  Cut the sweet potatoes in half, smash the center down with a fork and add the meat mixture to each sweet potato half.

5.  Top with sour cream, shredded cheese, jalapenos, and cilantro and serve.
