Extra Thoughts: Diane’s mother Julia Barger used her pressure cooker to make this recipe several time each summer. It was one of the family favorites. She did not sauté the bacon. You can put all the ingredients together and set the pot for 4 minutes instead. Instant pots makes it easier these days.

 

Ingredients:
6 cups green beans, de-stemmed and broke in half
5 slices Bacon, diced
1 cup scallions, diced
1 teaspoon Salt
1 teaspoon Ground Black Pepper
3/4 cup Water

1. Turn your Instant Pot on Sauté.

2Add the diced bacon to the instant pot and saute for 5 minutes while stirring.

3. Add the beans, scallions, water, salt and pepper to the pot.

4. Cook on high pressure for 4 minutes, and release all pressure immediately.

5. Taste and add salt and pepper as needed before serving.

Variations:
* If you avoid pork, use chicken sausage instead.

* For a full meal. Cut potatoes into halves, add carrots cut into large coins and use ham instead of bacon.
