Extra Thoughts: If you prefer a different protein, beef or hamburger can be substituted. The slaw brings a tangy crunch to the tacos!
Food Prep: Make the radish slaw ahead of time and keep sealed in an air tight container in the fridge. This will hold well for a few days.
Ingredients for Chicken:
2 pounds of chicken breast
1 can of cream of chicken soup (can substitute for 1 cup of chicken broth)
1 packet of tacos seasoning (or can make your own taco seasoning if you prefer)
1 cup of fresh salsa
1 cup of sour cream
1 pack of your favorite tortillas
Ingredients for radish slaw:
1 lime, juiced
1 tablespoon red wine vinegar
1/4 cup cilantro loosely chopped and stems removed
1 large fall radish sliced thin
1 avocado sliced into bite size pieces
salt to taste
To Make The Chicken:
1. Place frozen or fresh chicken breast in crock pot, cover with taco seasoning, add cream of chicken soup, and salsa
2. Cover and cook on low for 8 hours
3. When it’s finished cooking, shred the chicken and stir in the sour cream
4. Serve on your favorite tortillas
To Make The Slaw:
1. Combine lime juice, vinegar and cilantro in a bowl and stir to combine.
2. Add in the sliced radishes and avocado, stir to combine, then salt to taste.
3. Place on top of your protein.
4. Serve and enjoy!
