Meal Prep: 

Ingredients:
2 pints of cherry tomatoes
olive oil
4 cloves of minced garlic
salt to taste
1 french baguette
1 ball of fresh mozzarella broken into small chunks
Fresh basil, chopped

 

 

 

1. Preheat oven to 400 degrees. Slice cherry tomatoes into halves. Place halved tomatoes, in a skillet with olive oil and saute for 5-10 minutes over medium heat until the tomatoes are soft and the skins are starting to wrinkle. Add the garlic and saute for a couple more minutes. Remove tomatoes from heat.

 

2. Slice the baguette and place on a parchment lined baking sheet, drizzle each slice with olive oil, and bake in the oven at 400 degrees for 5 minutes, so the baguette slices become lightly toasted. 

 

3. Remove baguette slices from the oven. Place a spoonful of the tomatoes on each slice and top with mozzarella chunks.

 

4. Place the baguettes with tomatoes and mozzarella back in the oven on BROIL for 2-3 minutes or until cheese is bubbly and starting to turn golden brown. Remove from the oven garnish with basil and enjoy!
