Ingredients:
4-6 carrots
1 apple or pear
1 lemon, juiced
2 tablespoons honey
1 clove garlic, minced
1/4 teaspoon ground cumin

1/4 teaspoon cinnamon
1 teaspoon grated fresh ginger or 1/2 teaspoon dried ginger
1/4 teaspoon salt
1 dash cayenne pepper
1/2 cup raisins

1.  Gather all ingredients

2.  Peel and prepare carrots, (large grate or spiraled). 

3.  Grate or finely chop apple or pear and toss in the lemon juice to avoid turning brown.

4.  In a small bowl, whisk together the cumin, cinnamon, ginger, salt, and cayenne pepper, honey, and garlic

5.  Stir in carrots, apples or pears and raisins, and toss with dressing.

6.  Cover, and refrigerate at least 2 hours to allow the flavors to marinate.
