Extra Thoughts: You can always add chicken or bacon instead of steak.
Food Prep: Make hard boiled eggs ahead of time so they are ready to go when putting together the salad.
Ingredients:
4 hard boiled eggs
1/2 pound of spinach
1/2 pound of lettuce
2 Stalks of Bok choy (leaves and stem)
1 cup of shredded (or diced thin) carrots
Your favorite cut of steak
Salt and pepper
Your favorite cheese (optional)
Salad dressing Ingredients:
1/2 cup light tasting olive oil (or use any light tasting oil of your choosing)
4 Tablespoons honey
2 Tablespoons of white vinegar
1 Tablespoon + 2 teaspoons of ketchup
1/2 Tablespoon Worcestershire sauce
1/8 tsp. Salt
1. Prepare hard boiled eggs and set aside.
2. Cut spinach and lettuce into bite size pieces, wash well and dry (a salad spinner is best). Shred carrots and toss together with spinach and lettuce.
3. Rinse Bok choy leaves and dry. Cut into bite size pieces. Slice Bok choy stalks into thin pieces. Top the salad with the stalks and leaves.
4. Season steak with salt and pepper and prepare in a skillet or grill until done to your liking.
5. Let rest and slice thin. Cut hard boiled eggs in half and top the salad along with steak slices.
6. Whisk salad dressing ingredients together and drizzle over salad and serve!
