Extra Thoughts: You can substitute slivered almonds or pecans for the pistachios. The melon and grapes add a great sweet fresh flavor that complements the chicken well.

 

Ingredients:
1 cantaloupe
3 cups cubed, cooked chicken meat
1/4 cup chopped pistachios, optional
1 cup seedless grapes halved
1 cup mayonnaise
1 Tablespoon fresh lemon juice
1 Tablespoon fresh Tarragon
salt and pepper to taste

 

1. Cut melon in half, and remove seeds. Using a 1 tsp. sized measuring spoon, carve out small balls from the inside of the cantaloupe, about 20 total melon balls.

 

2. In a medium sized bowl, combine the cooked cubed chicken with the melon balls, grapes and pistachios, optional.

 

3. In a small dish mix together the mayonnaise and lemon juice and pour over the chicken mixture and stir to combine.

 

4. Mix in the Tarragon and season with salt and pepper.

 

5. Divide the chicken salad in half, scoop into both halves of the cantaloupe and serve!
