Meet 3rd generation farmer Mike Joseph and his wife Samantha. 

The dream of Windy Wild Acres actually started with a pilot hop yard in Grand Rapids, Ohio back in 2017.

In 2020, with many years of experience growing fruits and vegetables, Mike and Samantha decided to get back to their roots.

They packed up and moved to the family farm which has been in business for over 79 years.

Many things influenced this decision…

Mike received his first mushroom grow kit as a gift in 2017 which began the idea of producing them.

In 2022, they started their farm with the goal of producing high quality, nutrient dense mushrooms, as well as fresh cut flowers, herbs, and produce.

You’ll find that they have many unique varieties of gourmet mushrooms to choose from and be more excited to learn that you can now add this bountiful harvest to your CSA Market Boxes.

Lion’s Mane Mushrooms have a lobster-like flavor and texture. They are high in protein and vitamin D and also contain antioxidant and antibacterial compounds.

Oyster mushrooms have a mild seafood flavor with certain varieties leaning a little more earthy. With a meaty, soft to medium texture depending on variety, they are a good source of protein and high in fiber and vitamin B

Velvet Pioppini mushrooms have a nutty, peppery flavor with a crunchy texture that is maintained after cooking. They are high in protein and antioxidants.

Chestnut Mushrooms, A softer capped mushroom with a firm stem and speckles on their cap. As a member of the Pholiota family, they have a
gelatinous film that disappears when cooked. Their slight, earthy, nutty flavors have a mild resemblance to a shiitake mushroom.
