What is all the commotion about these days on the farm!!??
It’s the end of a three year long trial of Farmer John’s Wagyu meats! If you ever took a course, then you know that the only way to get a good grade in the end is by studying, research, trial and error. After all that you wait to see how well you did. Did you get a passing grade? Did you get the diploma?
John is feeling this same excitement! Like most of us you hope for a good outcome since you tried your best but your emotions wouldn’t let you believe it until you saw the results.
There’s also that feeling you get when the test results come back and you ACED it. You jump, shout, and tell everyone your accomplishment!
John’s studying began with researching breeding books, talking to chefs, and figuring out how to raise a crossbred Wagyu steer.
After all, Wagyu’s aren’t your average cattle, and the meats are a cut above!
The day finally came to see the results and restlessly John headed off to see the meat hanging on the rail at D & H Meats. We discovered after talking to the butcher that some of the cuts would not be worth the labor to get the small amount of meat between the bones.
This meant our waste was going to be huge on this steer! Could we afford to do this again and would people order our Wagyu beef from the extra list availability next week?
We did not let this stop us from thinking the best, especially after we saw the high marbling of the meat!

Anxiously we brought home the cuts of beef and began to do some trial cooking.
First, we would experiment with the round steak to see if it was more tender than usual.
Second, we would cook a Ribeye steak to see if the flavor was above the rest.
Third, we would test a hamburger to see if it shrunk and how much waste there was.Finally and most notably, we stored the drippings from the round steak in the refrigerator overnight and discovered that a layer of fat DID NOT form on the top.
All outcomes were positive…
